Tasty Vegan Banana Bread

Vegan Banana Bread
Today we wanted to share with you one of our favourite baked treats. We are not vegan and are not intending to adopt a vegan diet any time soon. We do, however, have family members who are vegan and one who is allergic to dairy. As a mother and daughter we have always loved to bake together and its a shame if our friends and family cannot enjoy our cakes and desserts. This prompted us to perfect a vegan recipe for banana bread or banana loaf (depending on where you are from!) as it is one of our favourite things to whip up quickly and to use up those bananas that have seen better days!

When selecting your ingredients make sure you use bananas that are brown as they will mash easily and be the tastiest! As we had no overripe bananas when we made this loaf we picked up a huge bunch from our local supermarket that were well past their best for the bargain knockdown price of 30p!

RECIPE
Ingredients 
3 Large or 4 Medium brown/black bananas
100g Brown Sugar
75g Oil (we use Vegetable Oil or Sunflower Oil)
225g Plain Flour
3 heaped teaspoons Baking Powder
3 teaspoons Cinnamon

Method 
  • Preheat your oven to 190 degrees Celsius
  • Peel and mash your bananas
  • Add oil and sugar and mix well until combined
  • Add the remainder of the ingredients (flour, baking powder & cinnamon)
  • Mix well until all of the dry ingredients are combined into the mixture
  • Line and grease a loaf tin (we use a loaf shaped lining paper for ease and spray lightly with sunflower oil)
  • Pour the mixture into the tin
  • Bake for 30 minutes uncovered before covering with foil to prevent burning the top of the loaf
  • Bake for a further 20 mins and check to see if baked (a skewer or toothpick should come out clean when inserted into the middle of the loaf)
  • Once baked remove from the oven and allow to cook slightly before turning out onto a cooling rack
The banana bread can be enjoyed warm or cold and is perfect to wrap up for packed lunches! If preferred you can also add some nuts to the unbaked mixture to give an extra crunch. Chopped walnuts are a great addition!
